I have three casserole dishes I discovered from Pinterest that are my absolute favourites. They are simple, easy to follow recipes. They each make a big quantity (9×13 dish) which is great as leftovers for lunches.

I have made this recipe several times for my boyfriend and I. This is not a recipe my kids would enjoy. I like to play around with the spice level by adding more jalapeños then the recipe calls for. It’s easy to follow using simple ingredients. Great for a busy, working mom like myself.

Lately, I have been buying my chicken breasts at Walmart because I like the price. Bacon and cheese is something I always watch for on sale and stock up on. All the other ingredients you will have no trouble finding at any grocery store.

This is a family favourite of ours. My kids will eat this one. I do get some fussing over the broccoli, but I don’t sweat it. My daughter (age 12) was able to follow this recipe and make it for dinner one night – that’s how easy it is! Delicious and filling.

  • Fresh broccoli has been expensive lately. I have been buying it frozen to save money.
  • Cheese and Bacon – I almost always have on hand (Remember stock up when on sale!)
  • Cream Cheese and Chicken Breasts- I usually pick up at Walmart. Watch for sales.

I have made this one several times. I LOVE it. My kids haven’t tried it yet, but I know they would like it. I have made it on all occasions adding some kind of vegetable just to give it more bulk. Once, I even added some left over jalapeños from the recipe above and wow, it was incredible! All the ingredients in this recipe are staples in my house which makes it great for an easy weeknight meal.
